What if you could travel from the royal kitchens of Kashmir to the dhabas of Punjab, wander through the food lanes of Old Delhi and finish your journey in the royal kitchens of Rajasthan, without leaving Mumbai? This Independence Week, MoMo Café at Courtyard by Marriott Mumbai International Airport is making that culinary journey possible with its Northwest Frontier Cuisine Festival, a week-long celebration of India's rich regional food heritage from August 14 to 21, 2026.
Rather than presenting North Indian cuisine as one broad culinary
category, the festival takes diners through four distinct regions, with each
evening showcasing the ingredients, cooking traditions and iconic dishes
associated with its destination.
Kashmir Wazwan Evenings Begin the Journey
The culinary journey opens on August 14 and 15 with Kashmir
Wazwan Evenings, bringing the grandeur of the traditional Kashmiri feast to
Mumbai.
The menu celebrates iconic preparations including Rogan Josh, Gosht
Yakhni, Rista, Dum Aloo Kashmiri, Nadru Yakhni and
fragrant Kashmiri Pulao. Completing the experience is freshly brewed Kahwa,
poured from a traditional samovar, adding an element of Kashmiri warmth and
hospitality to the dinner.
Punjab Comes Alive With a Dhaba-Style Feast
On August 16 and 17, the festival moves south-west to Punjab with
the Punjabi Dhaba Festival.
Expect the energy of a traditional Punjabi roadside eatery, with live
tandoor specialties, smoky grilled kebabs, rustic curries and freshly
prepared Amritsari breads. Familiar favourites including Butter
Chicken and Dal Makhani take centre stage, while Lassi and Chaas
bring a refreshing finish to the robust meal.
Old Delhi Takes Over the Dinner Table
On August 18 and 19, diners can move from Punjab to the capital
for the Delhi Street Food Carnival.
This part of the festival recreates the spirit of Old Delhi through live
chaat counters, succulent kebabs, freshly prepared Roomali Roti,
Mughlai favourites and popular street food classics.
Royal Rajasthan Nights Bring the Festival to a Regal Close
The final chapter unfolds on August 20 and 21 with Royal
Rajasthan Nights, celebrating the distinctive food traditions of the desert
state.
A live Dal Baati Churma experience takes centre stage alongside
regional favourites such as Laal Maas, Ker Sangri and an
assortment of traditional Rajasthani breads.
A Sweet Journey Across India's Regional Kitchens
No Indian food festival is complete without a generous dessert spread,
and the Dessert Studio offers its own regional journey.
Guests can look forward to Jalebi with Rabri, Ghewar, Kesari
Phirni, Moong Dal Halwa and Kulfi Falooda, alongside other
traditional Indian sweets inspired by the regions featured during the festival.
Regional Drinks With a Contemporary Twist
The beverage menu follows the same regional theme, combining traditional
flavours with contemporary presentations. Non-alcoholic options include the Himalayan
Mint Cooler, Punjabi Badam Lassi, Delhi Shikanji and Kesar
Badam Thandai.
Those looking for cocktails can explore creations such as the Saffron
Gin Tonic, Delhi Spice Mule, Patiala Old Fashioned and Royal
Rajasthan Sour.
A Culinary Celebration of India's Diversity
The Northwest Frontier Cuisine Festival at MoMo Café goes beyond a standard buffet by turning Independence Week into a culinary exploration of India's regional diversity. From the elaborate traditions of Kashmir Wazwan and the hearty flavours of Punjabi cuisine to the street-food culture of Delhi and the regal flavours of Rajasthan, each evening offers a different interpretation of India's northern culinary heritage.
